LIVER CLEANSING SALAD

INGREDIENTS:
 1 large whole raw beetroot, peeled
 1 Granny Smith apple, cored
 2 medium carrots, peeled
 ½ fennel bulb
 ¼ tsp lemon zest
 1 lemon, juiced
 equal amount of olive oil as lemon juice
 2 pinches of Himalayan salt
METHOD:

Cut the beet, apple, and fennel into sizes that fit into the feed tube on a food processor. Use the "shredding disc" or "grating disc" in a food processor. Alternatively, simply utilize a hand-held box grater for this recipe.

Shred or grate the beet, apple, carrots, and fennel.

Place into a mixing bowl.

Finely grate the lemon zest (before you squeeze the lemon for juice). Add to the salad.

Juice the lemon into a small mixing bowl and add an equal amount of olive oil to the lemon juice.

Add a couple of pinches of salt to the olive oil and lemon juice mix. Whisk gently.

Toss the dressing into the salad bowl. Stir to combine and serve.
