Delicate and tasty - these hash browns are a crowd pleaser!
Rinse, trim and break the cauliflower into smaller pieces and place in a processor and blend until it resembles fine breadcrumbs. You can also grate the cauliflower for similar results.
Add the cauliflower to a large mixing bowl. Add the remaining ingredients and mix. Set aside for 5-10 minutes.
Heat a generous amount of olive oil on medium heat in a large frypan.
Place scoops of the grated cauliflower mixture into the frying pan and flatten them carefully until they measure ~10cm in diameter. Aim to have 3-4 hash browns in the frypan to enable easy flipping. You can make the hash browns smaller if you prefer using a tablespoon scoop instead (creates ~5cm diameter hash browns).
Fry for 5 minutes on each side. Adjust the heat to make sure they don't burn. Remember - patience is a virtue - if you flip the hash browns too soon they will fall apart.
Continue until all hash browns are cooked. Serve with your favourite dip by themselves or as a side dish to a main meal.
