Preheat oven to 180°C.
Grease or line with baking paper a standard loaf pan and set aside.
In a bowl, mix eggs, banana, your choice of either honey, maple syrup or brown rice syrup, coconut milk, and vanilla essence.
In a separate bowl, combine baking soda, almond flour, Himalayan salt, and cinnamon powder.
Pour the liquid mix into the dry mix and stir until well incorporated.
Add in apple cider vinegar and stir until it is distributed throughout the mixture.
Pour batter into greased or baking paper lined loaf pan. Bake for 45-50 minutes or until a skewer comes out dry.
