Tasty snacks which are perfect for hungry mouths to feed.
Coarsely grate the sweet potatoes and zucchini into a large bowl.
Squeeze out any excess moisture that is produced.
Add all remaining ingredients (EXCLUDING salt since salt will keep the fritters too moist by drawing out excess water from the zucchini). Mix together well.
Heat oil in a medium frypan over medium heat.
Drop small handfuls of batter into the oil and flatten slightly. Fry for about 5 minutes each side or until golden and firm.
Remove to a baking tray lined with some paper towels. Sprinkle salt onto each fritter to taste. Continue with remaining mixture.
Serve fritters with your favourite dip and salad.
