INGREDIENTS:
 4 tbsp maple syrup
 2 tbsp coconut oil
 2 eggs
 1 tsp vanilla extract
 2 cups almond flour
 ½ cup coconut flour
 1 tsp baking soda
 1 tsp ginger powder
 1 tsp cinnamon powder
 ½ tsp cardamon powder
 drizzle of coconut butter (optional)
METHOD:

Preheat oven to 180°C. Line a tray with baking paper.

In a large mixing bowl, add maple syrup, coconut oil, eggs, and vanilla extract. Stir vigorously to combine using a spatula. (NOTE: The coconut oil will still remain clumpy but will combine better once the dry ingredients are added).

Add all the remaining dry ingredients to the mixing bowl and fold with a spatula until well combined. Ensure that the coconut oil is well worked into the dough (or no longer visible) by pressing and spreading the mix firmly with the spatula.

Using your hands, take roughly a tablespoonful of dough and roll out evenly shaped round biscuits (~5cm in width) and place them on the baking tray.
Flatten the biscuits slightly with your fingers and continue adding the biscuits to the trays until all the dough is complete.

Bake the biscuits for 12-15 minutes or until light golden brown. Allow the biscuits to cool completely.

Drizzle some coconut butter for decoration. This butter will remain firm and is a healthy alternative to regular icing sugar.

Store in an airtight container for up to 1 week.
