Tasty and healthy bites full of good fats - and great for a choc mint fix!

INGREDIENTS:
 700 ml coconut oil
 3 tsp peppermint extract
 2 tbsp stevia powder
 5 tsp heavy cream or coconut cream
 3 x 200g 70% cocoa cooking chocolate
METHOD:

In a blender add all ingredients (except cooking chocolate) and blend until well combined.

Using a teaspoon, scoop some of the mixture and free form drop small circles onto a baking paper-lined baking tray, making circles measuring roughly 4cm in diameter.

Freeze treats for 20 minutes.

Melt the cooking chocolate until smooth using the double boiler method (placing a stainless steel bowl with the chocolate in it over a saucepan of boiling water).

Remove the bites from the freezer. Dip one bite into the melted chocolate at a time using a tablespoon. Coat well and allow excess chocolate to drip off before placing on the baking paper-lined baking tray again.

Allow to set by placing back into the freezer again for 30 minutes.

Best if stored in the freezer but if too hard, they can be stored in the fridge.
