Basil - the perfect base for a perfect pesto!

INGREDIENTS:
 2 cups of tightly packed basil leaves
 2 garlic cloves
 ¼ cup pine nuts
 ¼ cup cashews
  cup olive oil (or more if needed)
 1 tbsp lemon juice
 ¼ cup parmesan cheese, grated
 salt & pepper to taste
SUBSTITUTIONS:
 Substitute half the basil with fresh parsley or spinach
 Swap the cheese with nutitional yeast for a vegan option
METHOD:

Wash the basil leaves with water and pat dry with a paper towel to remove excess fluid.

Combine all ingredients in a food processor.

Blend until you reach a smooth consistency (about 30 seconds).

Transfer to a clean jar and store in the fridge for up to 3 days.
